It's so simple to cook. Stop by for your own tomahawk, that's the first step! Each one is about 3.5 lbs which can easily feed a few people.

There's a few ways to cook this, but we find the best way is grilling the tomahawk. This takes awhile and may be scary for some people as the fat of the steak will catch the flame of the grill. Don't worry! Just take your time and use caution, you will have an amazing steak afterward!

For both cooking methods, start with a dry brine. Remove your steak from the fridge two hours before grilling. Put it on a rack over a pan. Salt the entire steak, all sides, with quality kosher salt or sea salt and let sit for two hours. The salt draws out the moisture but the steak will reabsorb the moisture and flavoring.

If you don't want the bone of the tomahawk to get too charred, wrap it in foil.

Turn on all burners of your grill on very high heat to let the grates get hot. When you are ready to grill the tomahawk, turn off one or two of the burners. The grates will be hot enough to give your steak a nice sear and grill marks. You will cook over indirect heat. For a three burner grill, use your largest burner to heat the grill and turn off the two smaller ones. Cook for 45 minutes-1 hour, flipping after 18-20 minutes.

When your steak is 120 degrees, turn on all burners and move the steak to the direct heat burner that has been on the whole time and cook for 4 minutes per side with the lid open. Use caution, this may flare! Turn the steak in the middle of the cook so you get nice grill marks!

Continue to cook until internal temp reaches 125 for rare, 135 for medium rare, 145 for medium, 155 for medium well and 160 for well. Remove from heat and butter the top. Add sea salt and black pepper as desired. Let sit for 10 minutes and serve!

ALTERNATIVE COOKING METHOD:

If the grill scares you, no problem. Instead of putting the steak on the grill immediately, take the room temp tomahawk and cook in the oven on a baking sheet with rack at 350 until 120 degrees internal temp. Then, heat your grill on high. Add the steaks to give a nice sear and grill marks for about 4 minutes per side. The grill may flare up, so use caution!
