It's so simple to cook. Stop by for your own tomahawk, that's the first step! Each one is about 3.5 lbs which can easily feed a few people.
There's a few ways to cook this, but we find the best way is grilling the tomahawk. This takes awhile and may be scary for some people as the fat of the steak will catch the flame of the grill. Don't worry! Just take your time and use caution, you will have an amazing steak afterward!
For both cooking methods, start with a dry brine. Remove your steak from the fridge two hours before grilling. Put it on a rack over a pan. Salt the entire steak, all sides, with quality kosher salt or sea salt and let sit for two hours. The salt draws out the moisture but the steak will reabsorb the moisture and flavoring.
If you don't want the bone of the tomahawk to get too charred, wrap it in foil.
Heat only one side of your grill to medium high heat. For example, if your grill has 2 burners plus one large third burner, only light the large third burner. If you have three equal sized burners, light 2 of them. To grill a tomahawk, you first need the indirect heat. Place the steak on the grill away from the flame and cook for 45 minutes-1 hour, flipping after 18-20 minutes have past.
When your steak if 120 degrees, move it to the direct heat over the flame and cook for 4 minutes per side with the lid open. Use caution, this may flare! Turn the steak in the middle of the cook so you get nice grill marks!
Continue to cook until internal temp reaches 125 for rare, 135 for medium rare, 145 for medium, 155 for medium well and 160 for well. Remove from heat and butter the top. Add sea salt and black pepper as desired. Let sit for 10 minutes and serve!
