Holiday Gravy from Beef Tenderloin Trimmings

When you order a whole or half beef tenderloin from Gaiss' Market, we give you the trimmings with your order. Our tenderloins for December 2025 are sold at $29.99, on the pre trim weight. You don't need to be a master chef in the kitchen to make a gravy from beef trimmings! Just follow this easy recipe below and impress your guests with a homemade masterpiece.

Beef Trimmings
Tallow (or olive oil)
2 Onions
2 Carrots
1 Leek
2 Cloves of Garlic
Fresh Thyme
1 3/4 cups Dry Red Wine
3 1/2 cups Beef Stock
Salt
Pepper
Cut the trimmings, onions, carrots, leek and garlic into pieces, however you are comfortable cutting. These will be strained out. Add the tallow or olive oil to the bottom of a heavy bottom pot and heat. Add the beef trimmings with the onion and some salt, let sear until fully cooked. The onions should have a nice caramel color. Add the carrots, onion, leek, garlic, and thyme. Cook until the vegetables are soft. Add the red wine and optional port, let boil and reduce. Add the stock and let simmer. After it's slightly reduced, strain the gravy and add it back into the pan. Thicken as needed with a slurry of cornstarch and water. Add salt and pepper as desired.
